Fry Okra

 

PREP 10 MINS | COOK 15 MINS | FEEDS: 4-6

This is a real comfort dish for me, served up with some white rice, dhal, and a good spoonful of mango or apple achar…a wholesome vegan meal.


Ingredients:

200g Fresh Okra, thinly sliced
1 Onion, diced
2 cloves Garlic, crushed
2  tomatoes, diced 
1 tsp whole jeera
1 tsp Salt
2 tbsp Oil for frying


Method:

1.Heat the oil in a  pan and fry the onions, garlic, and jeera for about 3 mins

2.Add in your okra and tomatoes and fry for a further 7-10 mins, or until the okra and tomatoes are cooked to your liking. 

3.Plate up and eat. I like to have mine with dhal and rice and a spoonful of achar.
